The story tells that Västerbottensost was invented one day in 1872 when the cheese maker Eleonora Lindström was interrupted during the cheese making process by a male visitor. The cheese was left unguarded and the process was prolonged. The mistake was not discovered until several months later – and became a sensation.

 

Even though many years would pass, Elenora had laid the foundation of what would become The Kingdom of Cheese, an area located in between the windswept beaches of Bottenviken in the east to the woodlands in the west with its bewitching lakes and mountains. The region’s fields, agriculture and cattle have contributed for the long-lasting, unique cheese culture which has had its centre in The Kingdom of Cheese for the past 130 years.

When Elenora Lindström made the very first cheese she could not have anticipated how appreciated her cheese, the Västerbottensost, would become. During the 130 years that has passed since then many has described it with pleasure. August Strindberg in his days described the Burträskost, as the Västerbottensost was called in those days, as indispensable at a dinner party.

 

The Västerbottensost has developed into a prominent commodity in the Swedish kitchen during the last few decades. Many of the country’s finest chefs often use Västerbottensost in their cooking and these recipes are growing by number.
